- Prepare the Oven and Pan: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
- Mix the Wet Ingredients: In a large mixing bowl, combine mashed bananas, melted butter, sugar, eggs, and vanilla extract. Stir until smooth and well-combined.
- Add the Dry Ingredients: Sift together the flour, baking soda, and salt in a separate bowl. Gradually add this to the wet mixture, stirring until just combined. Be careful not to overmix.
- Prepare the Snickerdoodle Topping: Mix sugar and cinnamon in a small bowl.
- Assemble the Bread: Pour half of the batter into the prepared loaf pan. Sprinkle a layer of the cinnamon-sugar mixture over the batter. Add the remaining batter on top and finish with another layer of cinnamon-sugar.
